Tacos De Papa (A Plant Based Cinco De Mayo)


I don't care who you are, or where you're from. Give me any reason to eat tacos and I am there! Not that I ever need a reason but it's certainly fun to have one!


Since we've gone WFPB (Whole Foods Plant Based) I truly have not felt deprived or missing anything except for one tinsy wittle thing and that was street style carnitas. The salty shredded pork, the corn tortillas doused in lime juice and fresh cilantro. My absolute favorite thing on the planet to eat. I tried with black beans and it just wasn't cutting it. I mean bean tacos are not bad at all but it didn't satisfy that craving I had.


Enter the glorious Taco De Papa!! Now, in no way are the potatoes similar to pork but maybe it's because I also love potatoes so dang much that I don't even care. Whatever it is, these are the bomb and now I can be fully fulfilled living this plant life!

So a few things about the recipe below. I used baby reds because it's what I had on hand, however you can use russet, golden, or even sweet potatoes and they are all just as good. The best news? You don't have to peel them either!


The cilantro lime creme sauce is AMAZING, it's definitely a must make. Pretty much just plan on memorizing how to make it because you'll want to add it to every single Mexican dish you ever make. The sauce is so good, you won't dare think of missing cheese again.


For the sauce I like to use pre-made guacamole because we usually have it on hand and I typically have six little hands pulling on me as I'm making dinner so any way I can cut corners is A+. You can absolutely use 1/2 an avocado in it's place and there isn't much of a taste differential.


I use a very small amount of oil and salt, if any, in all of my recipes, this may not be to your liking. If that's not a concern you may want to use a little more, boil potatoes in salt water and traditionally fry your corn tortillas.


For the taco seasoning you can use a packet or you can make your own. I follow this recipe and keep a little jar of it in the pantry.
