2 Ingredient Ice Cream (DF, GF, SOS FREE)


This claim has been made so often it's become a cliche but this is the real deal, best thing since sliced bread! Guilt FREE ice cream? Ummmm, YES PLEASE! Naturally sweetened with ripe bananas and filled with coconut creamy goodness this "Nice Cream" is seriously amazing.

Since we've gone WFPB (Whole Foods, Plant Based) we have slowly transitioned to mostly non-processed foods as well. One day I will have all the time to make my own corn tortillas and canned jams but in the meantime simple recipes like this are replacing most of our processed store bought items. There are plenty of delicious non-dairy ice creams available now a days and we were getting them often when we first started but I still didn't love the amount of sugar and fat in them. Since I've discovered this method I see no reason to ever buy them for a week night treat again!


A few notes before you get started. This is not a freeze over night kind of thing. You actually won't want to do that, it will become too hard. You can mix it up in the food processor or high speed blender and eat as soft serve right away (my personal preference) or you can place it in the freezer for an hour or two to make it scoop-able.


Instead of wasting money on those bags of frozen bananas I keep a freezer storage ziplock handy. Anytime I spot an over ripe banana on the counter I chop it up into thick chunks and toss into the bag. Then we just use as needed. I also keep a few cans of the coconut milk in the fridge so when they blended together it remains cold.


This is so versatile, the options are endless. You can make any flavor you like; chocolate, peanut butter, Oreo, wild berry, mango, pineapple, cherry-chocolate, etc. If you want it chunky add your additions after you've blended the coconut milk and banana and just pulse a few times. If you want it fully mixed in like chocolate or peanut butter add it in the beginning.
